Broccoli Mushroom Stir Fry

Broccoli Mushroom Stir Fry Review

The Source

This was a wonderful meal tonight! Debbie and I are so excited we found Monkey and Me’s General Tso’s Broccoli Mushroom Stir Fry! We were looking for a quick meal using broccoli and mushroom and rice and this was a perfect solution.

The Cooking

It made for a quick meal with the two of us working together. First, I used our food processor to slice up the mushrooms and I cut the broccoli into smaller bite size pieces. Secondly, Debbie mixed up the sauce and rinsed the chick peas. Finally, she sauteed everything. In the background we had our rice cooker making rice. We had it all done in 30 minutes.

The Eating

As to the result, the flavor was delicious and the plates were appealing to the senses. I did not add anything to the recipe. I loved it just as it was. On the other hand, Debbie likes her dishes a little hotter so she add a sprinkle of red peppers. We both agreed this was going on our favorites list. Speaking of, you can see that list here.

The Summary

One of the things Debbie and I love about eating WFPB No Oil is we can eat every meal to the point of satiety. Each meal, our focus in eating is always about the starch first. The rice made up the starch for this meal and the stir fry added just the right amount of vegetables and flavor. Most nights, we normally split our dinners into four servings so we have leftovers for lunch the next day. This recipe ended up serving two servings. Good thing we made extra rice. Need something for lunch tomorrow!

Monkey and Me is a wonderful site. We have found many great recipes for WFPB meals there. We look forward to trying more recipes and sharing our results with you!
