Broccoli and Rice Casserole Review
The Source
Tonight we made this One Pot Broccoli and Rice recipe from My Plant-Based Family. This reminded me of a broccoli and rice casserole I used to make when I was in my 20’s. You know the one – canned chicken, canned cream of mushroom soup, broccoli, and cheese. This is just as easy, just as good, and so much healthier!
The Cooking
This couldn’t be easier. Bring water to a boil, add some rice, plus nutritional yeast, onion powder, and garlic powder to the water and simmer for 10 minutes. Add the plant milk and broccoli and cook 5-10 more minutes until the broccoli is done and that’s it! Next time I think I would cut the broccoli a little smaller. Florets the size we used took almost 10 minutes to cook, which meant we did have to add a little plant milk to keep it creamy.
The Eating
This was delicious and brought back that nostalgic feeling. We both added some garlic salt to the top, and I added a little extra “nooch”.
The Summary
All in all, this is a winner. It’s a great meal, super quick and tastes good. This broccoli and rice casserole recipe makes enough for at least 4 servings. We filled our plates and still had plenty left for lunch or dinner tomorrow. As always, the starch is the star with the rice taking center stage and the broccoli adding a bit of color, flavor, and nutritional value. This is the first recipe we’ve tried from My Plant-Based Family, but I’m sure it won’t be the last. We’ll be looking over their site for another tasty meal to try. When we find it, we’ll let you know what it is and how it tastes.
