Vegan Mushroom Stroganoff Review

Sunday, Debbie and I tried Debra Klein’s very tasty Vegan Mushroom Stroganoff. The flavors in this dish were delectable. It is definitely going on our favorite list!
The Cooking
It made for a quick meal with the two of us working together. First, I used our food processor to slice up the mushrooms and onions. If you do not have a food processor, I highly recommend getting one. Some of these common tasks are made so much easier with the food processor. We were debating though with the mushroom whether slicing them thicker might have left the mushrooms more appealing visually. Our mushrooms cooked down till they resembled a mash more than mushrooms. I let Debbie do the cooking while I played sous-chef. One of the benefits of this recipe is it calls for white wine. Of course, since we had no other recipe using wine this week, we poured some glasses to go with cooking and eating. Win win. I started some spaghetti while Debbie sauteed everything. The instructions were easy to follow. We made one substitution from her recipe: we used corn starch instead of arrow root. Seem to work well. We had it all done in roughly 30 minutes. Going forward we will start a timer to see what it really takes so we can give a realistic time. Felt like 30 minutes.
The Eating
As to the result, the wine and balsamic vinegar really added a nice flavor. The visual presentation was a little lacking. We think a thicker sliced mushroom might enhance the visuals. The stroganoff went very well with the spaghetti. I enjoyed dipping and wiping up the stroganoff with our oil free rolls from Costco. We enjoyed this immensely.
The Summary
This was a quick delicious dish that we got two servings from. It might feed four but it was too good to make it to the next day! The flavor was great and it created a nice dip for our bread. We This was a great start to the week. Check out what we are planning on having the rest of the week.
This was a first time trying a recipe from Debra Klein‘s website. We will definitely be exploring more of her recipes.
Awesome….I hadn’t thought of using the food processor for this recipe….would be interesting to make that way, as a less chunky sauce. Thanks for reviewing my recipe, and I’m glad you enjoyed it.
