The Source For This Instant Pot Curry

Tuesday, Debbie and I tried The Vegan 8‘s Vegan Instant Pot Curry. The author says this is her favorite curry. We both agreed it could be ours too but need need a little more curry flavor. We used a store blend which the author says is not as strong as her personal blend. It was good enough that we want to try it again using her blend. Now, on to the cooking part.

The Cooking

First thing to do, start some rice. It is so nice having a rice cooker. Two cups of rice, three cups of water. Set to cook. Forget about it.

We were excited to be able to use our Garam Masala spice. We were looking forward to see how it taste. We had enough onions left over from the previous night so I did not need to cry tonight.

We did do a substitution: Soy Sauce for the Coconut Aminos. We will need to break down and pick up some – seen it many times, just have not pulled the trigger to buy it yet.

Debbie did all the mixing and sauteing in the instant pot. I have heard this could be scary since the Instant Pot can get quite hot but Debbie was a pro. No one got hurt.

We had some chickpeas leftover from what was needed. I used these to make some roast chickpeas. Check out my recipe for them.

We had a power outage right at the end of cooking. Seems one of our outlets is bad. Once we found the outlets we could used, we were back in business and Debbie finished up.

The Eating

We served the curry over the rice. This instant pot curry has a nice flavor but we both felt it needed to be stronger. It was delicious and it made enough that we had it for lunch the next day. Having a day to marinate, the lunch had more flavor. We both enjoyed it for dinner and lunch.

The Summary

I started a timer when cooking but with the power outage, my guess is about 45 minutes. Debbie and I both want to make this dish again. We will have the coconut aminos and we will make the curry spice blend per the recipe. The author says her blend is stronger in flavor. This is what we want. If the next time it has that stronger flavor, then I could agree with the author that this is a favorite curry to make.
