Best Vegan Queso Review

Tonight after we had The Vegan 8’s Vegan Chili Pasta with Veggies (see our review here), we were still wanting a little something to munch on. We decided to try another recipe from The Vegan 8 – the Best Vegan Queso (aka nacho cheese)!

The Cooking

This recipe was simple. Soak cashews, blend with plant based yogurt, salsa, and seasonings, then mix in some diced tomatoes and chopped green chiles. We topped it off with some sliced jalapeno and chopped cilantro. The recipe actually calls for it to be heated on the stovetop after mixing, but we opted to eat it cold . It served as a tasty dip for our oil free soft pretzels from Costco.

The Eating

This is good stuff! I am a nacho lover in the worst way. Back in the day before eating whole food plant based, no oil, if we went to a restaurant and there were nachos, there was a good bet that’s what I would be ordering – no meat, but all of that gooey cheese and sour cream. This is the closest I’ve gotten to a nacho cheese flavor. For those of you who miss the flavor of cheese, yet don’t like the taste of nutritional yeast and/or blended veggies in your sauces – this is for you! No nutritional yeast, no potatoes, no carrots. The recipe makes a lot, too, so I am already thinking of what Brian and I can use the leftovers for.

The Summary

Yum. This was nacho cheesy and creamy with a kick, and really hit the spot. We soaked the cashews because we don’t have a high speed blender, but still found the dip a little grainy. Next time we will probably try to blend just the cashews first to get them super smooth before adding the rest of the ingredients. Even if that doesn’t do away with the graininess, I’d still make this again. It was that good. Brian wasn’t quite as sold as I was, but he does not share my irrational love of nachos.
