Meals we are eating:

Carrot Cake – Best Vegan Carrot Cake – This was a delicious dessert. The icing in the recipe was okay. We think next time we would use the icing from the cinnamon rolls instead.

Macaroni Salad – Vegan Pimento Macaroni Salad – This salad was delicious. It was good hot or cold. Was almost like an antipasta in flavor.

Orange Chicken – Vegan Orange Chicken With Cauliflower – This was very delicious too. The cauliflower makes a good substitute for the texture of chicken. The breading was crunchy.

Spaghetti Pie – Creamy Spaghetti Pie – This was not one of our favorites. We might not have gotten the recipe right but it did not appeal enough to us to want to make it again. We ate all of it and had the leftovers the next day but was not in our list of favorites.

Chips and Dip – Cowboy Caviar Dip – Along with my homemade chips (which I will have to post the recipe), this was a meal we really enjoyed. I think we made it again the next night because it was soooo good. We made nachos out of this. It was the bomb!

Nachos – Debbie says this was made from a Vegan 8 bean dip. I thought it was the Cowboy Caviar Dip. I will get the right link and update. The chips are homemade chips. The picture on this page are these nachos. Just as good as the restaurant.

Potato Fries – Crispy Mashed Potato Fries – These were great! Mashed potatoes made into a block, then sliced into steak fries and air fried. Delicious!

Chocolate Cake – One-Bowl Chocolate Wacky Cake – This was an amazing chocolate cake. Who needs eggs and oil? Not this cake. Easy to make.

Baked Beans – Best Vegan Baked Beans – These were intense barbecue baked beans. They were perfect on their own or on top of a potato.

Sloppy Joes – BBQ Lentil Sloppy Joes – We used the Costco rolls we get. I could eat these every night! Just like the sloppy joes we had as a kid.

Jalapeno Poppers – Sweet Potato Vegan Jalapeno Poppers – These were good but the effort put into making them makes us feel we would not do them again. One alternative we talked about was just making them into a mash instead – less presentable but quicker to make.
